Brownie Stuffed Chocolate Chip Cookies

SOURCE: Chocolate chip cookie dough: The Ultimate Southern Living Cookbook. The brilliant idea to stuff a chocolate chip cookie with a BROWNIE came from http://picky-palate.com/.
DEGREE OF DIFFICULTY: Moderate
RECIPE TYPE: Ridiculously good cookies

PREP TIME: 1 hour or more (depending on what you have ready)

COOK TIME: 18-22 minutes per batch

RECIPE:


Ingredients for brownies:
Brownie mix
Egg
Oil
Water



Directions:

1. Combine water, oil, and egg in large mixing bowl.



2. Add brownie mix and stir until blended.


3. Bake in greased pan per package directions and let cool.








Ingredients for cookie dough (modified recipe from "The Best Chocolate Chip Cookies" recipe from the Ultimate Southern Living Cookbook)

1 cup butter at room temperature
3/4 cup brown sugar
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla
2 1/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
2 cups semi-sweet chocolate chips
1 cup dark chocolate chips 



Directions


1. Beat butter until creamy in electric mixer. Beat in sugars until well blended.




2. Add eggs, on at a time, beating well after each. Add vanilla and mix well.



3. In a small bowl, mix flour, salt, and baking soda together. 



4. Gradually add flour mixture to the butter mixture and mix well after each addition.




5. Add chocolate chips and stir




Directions for Brownie Stuffed Chocolate Chip Cookies

1. Prepare pans for baking, I use silpats and perforated pans from Demarle. I am a Demale consultant and can sell you these items if interesting...these products are amazing!

2. When brownies are cooled, cut into small squares.


3. Scoop a small amount of cookie dough, place a piece of brownie on top and then top with another scoop of cookie dough. 



4. Slightly flatten cookies to distribute brownie (I did not do this enough and mine ended up with a lump of brownie in them...still delicious.



5. Bake at 350 degrees for approximately 18 minutes. 


6. Pour a HUGE glass of milk and chow down...I dare you to try to eat two!





OUTCOME: Excellent
